Why are emails with addresses such as "[Edited: "Personal Information"]" ending up in my in box?

When emails are sent, two things are sent to the mail server:

  1. The list of recipients
  2. The email you are sending

It's possible that your address was on the BCC: line, which competent providers do not send with the email. It's also possible that the sending mail system is an irresponsible one that does not compare the recipient list in (1) with the addresses on the To:, CC:, and BCC: lines.

Spammers and scammers have several ways to hide the source of the emails and the list of addresses they are sending to.
